About Honduras Cerro Azul Coffee
Our newest single origin coffee, Honduras Cerro Azul, comes from the mountainous region of Siguatepeque, Honduras, where generations of smallholder farmers cultivate specialty coffee at elevations above 1,350 meters. Produced through COHORSIL, a cooperative of local growers, this coffee reflects the quality and craftsmanship that have made Honduran coffee increasingly recognized among specialty coffee enthusiasts.
The region’s cool mountain climate, abundant rainfall, and fertile soils create ideal conditions for producing coffees with exceptional sweetness, balance, and body. By working together through the cooperative, farmers are able to maintain strict quality standards while showcasing the distinctive character of specialty coffee from Honduras.
What Makes This Honduras Coffee Unique
Honduras Cerro Azul is a fully washed coffee, a traditional processing method known for producing clean, balanced, and approachable cups. After harvest, the coffee cherries are carefully processed to highlight the natural characteristics of the beans, allowing the sweetness and complexity developed during cultivation to shine through.
A blend of Bourbon, Catuai, Caturra, and Pacas varieties contributes to a classic Central American coffee profile. While some coffees are defined by bold fruit flavors or experimental processing methods, this coffee stands out for its balance, consistency, and everyday drinkability.
