About Colombia Huila Yoher Bustos Coffee

Our newest single origin coffee, Colombia Huila Yoher Bustos, comes from Los Cristales, a family farm in El Cedral Bajo, Huila. Located at approximately 1,900 meters above sea level, the farm benefits from the high elevation and favorable growing conditions that have helped make Huila one of Colombia’s most celebrated specialty coffee regions.

Los Cristales belongs to the Bustos family and has been managed by Yoher Bustos for the past eight years. The farm provides his family’s entire livelihood, making the care and attention invested in each harvest especially meaningful. Through careful cherry selection and meticulous processing, Yoher produces an expressive coffee that showcases the vibrant character of Pink Bourbon.

What Makes This Colombian Coffee Unique

This coffee begins with ripe cherries that are harvested and floated to remove underripe or defective fruit. The selected cherries undergo approximately 12 hours of oxidation in the hopper before being depulped and fermented in tanks for 80–100 hours.

After fermentation, the coffee is washed and transferred to covered raised beds, where it dries slowly for 8–20 days. This extended and carefully controlled process helps develop the coffee’s sweetness while preserving the clarity and bright fruit character found in the finished cup.

Pink Bourbon is prized for its vibrant acidity, layered sweetness, and fruit-forward character. In Yoher Bustos’ coffee, those qualities come together in a cup that feels lively and complex while remaining exceptionally clean and balanced.

Tasting Notes: Pink Grapefruit, Cane Sugar, and Nectarine

In the cup, expect bright pink grapefruit acidity, juicy nectarine, and a clean cane sugar sweetness. Pink grapefruit provides a lively citrus character, while nectarine brings a softer, ripe stone-fruit quality. Cane sugar rounds out the profile with a crisp sweetness that keeps the coffee balanced and refreshing.
