The Story Behind the Coffee

Our newest single origin, Mexico Finca Nuevo México, comes from the lush highlands of La Concordia, a coffee-growing region in southern Mexico known for its mountain landscapes, rich biodiversity, and generations-deep agricultural traditions. The farm itself, Finca Nuevo México, is a multigenerational family operation established in 1978. Today it is stewarded by Ricardo Ibarra Baumann, who inherited the land from his mother and continues the family’s dedication to thoughtful, quality-focused farming.

Set at 1300 meters above sea level, the farm spans 75 hectares of coffee-growing land, surrounded by an additional 320 hectares of natural reserves that protect native plants, wildlife, and the surrounding ecosystem. The family’s approach to harvesting involves three stages of selective picking, ensuring that only the ripest, most flavorful cherries make it into each lot.

What Makes This Coffee Unique

While Mexico is often associated with mellow, chocolatey coffees, this lot stands out for the clarity and sweetness that come from its fully washed process and its focus on clean, meticulous drying. After cherries are picked, they’re depulped and washed before being patio-dried, a slower, more hands-on method that requires constant turning and attention to airflow.

The farm grows a mix of Villa Sarchi and Híbrido de Timor varietals, both known for their resilience and their ability to produce sweet, structured cups. Combined with the region’s microclimate and the farm’s selective harvesting, the result is a coffee that hits the sweet spot between comfortingly familiar and unexpectedly decadent.

In the cup, you’ll find a warm, confectionary profile centered around cocoa and creamy toffee, rounded out by a note reminiscent of a Reese’s Cup- that perfect mix of chocolate and peanut-butter richness. It’s dessert-like without being heavy, sweet without being syrupy, and incredibly easy to drink.
