The Story Behind the Coffee

Our latest single origin release, Caturra The Journey, comes from the high-elevation slopes of Nariño, Colombia, where misty mornings and rich volcanic soils create ideal conditions for specialty coffee. This lot was cultivated by Huver Castillo on his family’s farm, El Paseo, a property that sits between 1750–1950 meters above sea level in the Buesaco region, a zone celebrated for balanced, nuanced coffees and meticulous attention to quality. 

Huver’s path to coffee farming is as thoughtful as his farming practices itself — a third-generation grower whose deep connection to the land informs every stage of production. On El Paseo, shade trees dot the landscape and care is taken to maintain a diverse, healthy ecosystem that supports consistent ripening and development of sweetness in the cherries.

What Makes This Coffee Unique

What sets Caturra The Journey apart is its anaerobic semi-washed process, designed to highlight the inherent characteristics of the Caturra varietal while adding depth and complexity.

After harvest, cherries undergo a carefully staged fermentation — beginning with aerobic resting to sort quality and shifting into anaerobic tanks where pH is closely monitored. Once fermentation reaches its ideal point, the coffee is dried slowly under the sun, then rested in climate-controlled bags to stabilize the flavors before milling. 

This combination of high-altitude growing, thoughtful processing, and attention to detail yields a cup that is both rich and refined. In the cup, Caturra The Journey offers a lush, inviting profile built on chocolatey warmth, layered with toasted almond richness, and a hint of amaretto-like sweetness that lingers on the palate. These notes make it a captivating coffee that’s both comforting and intriguing — perfect for coffee lovers who appreciate a fuller, dessert-like experience without sacrificing clarity.
