The Story Behind the Coffee
Our newest single origin, Colombia Huila Santa Maria, comes from the mountainous coffee-growing region of Huila in southern Colombia—one of the country’s most celebrated areas for specialty coffee. Known for its high elevations, rich volcanic soils, and ideal climate, Huila produces coffees that are vibrant, sweet, and remarkably expressive in the cup. 
This particular lot comes from the town of Santa Maria, nestled in the northern part of the department near the towering Nevado del Huila volcano. Coffee from this region benefits from mineral-rich soil and cool mountain air, conditions that allow the cherries to develop deep sweetness and layered fruit character. 
Farmers in this region have cultivated coffee for generations, blending traditional growing methods with a careful attention to quality that has helped Huila earn a reputation as one of Colombia’s most important coffee-producing areas.
What Makes This Coffee Unique
Colombia Huila Santa Maria showcases the clean, balanced profile that Huila coffees are known for, shaped by both terroir and careful processing. After harvest, the coffee cherries are processed using traditional washed methods, allowing the natural characteristics of the beans to shine through with clarity and precision. This approach highlights the sweetness and bright fruit notes that develop in Huila’s high-altitude environment.
The result is a cup that is vibrant yet approachable, with smooth sweetness and floral complexity. Coffees from Santa Maria often express elegant notes like peach, apple, and cane sugar—hallmarks of the region’s flavor profile.

Expect a smooth, structured, and approachable cup. Notes of cacao form a rich and chocolatey foundation. Peach adds a gentle fruit sweetness that lifts the profile, while pecan rounds everything out with a soft, nutty finish.
The body is silky with a balanced acidity, making this an easy, everyday drinker with just enough complexity to keep it interesting. It performs beautifully as a drip coffee or pour-over, and also translates well as an espresso with a chocolate-forward, slightly sweet finish.
