The Story Behind the Coffee
Nestled in La Concordia, Chiapas, Finca Nuevo México is a family-owned farm that has been part of the region’s landscape since 1978. While the land has been cultivated for decades, it’s only recently entered its first generation of coffee production under the care of Ricardo Ibarra Baumann, who inherited the farm from his mother.
The estate spans 75 hectares of coffee, alongside an additional 320 hectares of protected natural reserves, where biodiversity thrives. Ricardo and his team use a careful three-stage picking process, ensuring only the ripest cherries make it into production—an approach that reflects both patience and respect for quality.
What Makes This Coffee Unique
At 1300 masl, the farm’s location provides fertile soils and an ideal microclimate for cultivating exceptional coffees. The deliberate three-stage harvest allows for precision and consistency, resulting in a clean, balanced cup that captures the essence of Chiapas terroir.
