The Story Behind the Coffee
Our newest single origin, Ethiopia Sidama Gashu Tafese, comes from one of the most celebrated coffee regions in the world. Sidama, located in southern Ethiopia, is known for its lush highlands, fertile volcanic soil, and ideal growing conditions that consistently produce coffees with stunning clarity and sweetness. Smallholder farmers in this region have been cultivating coffee for generations, often tending to just a few acres of land, with each harvest representing a deep connection to both craft and community.
What Makes This Coffee Unique
This lot is a natural process coffee, a method that allows the fruit of the coffee cherry to dry directly on the bean before being removed. Unlike washed coffees, where the fruit is stripped away early in processing, natural coffees soak up the sweetness and character of the cherry as they dry, often resulting in a vibrant, fruit-forward cup. The process requires careful attention: cherries are meticulously hand-sorted, then spread out on raised beds to dry in the sun for several weeks, turned frequently to ensure even drying.
The result is a coffee that bursts with character: bright lemon acidity, the sweetness of cane sugar, and the juicy depth of ripe nectarine. It’s a perfect example of how Sidama’s high altitudes and traditional processing methods work together to create something truly special.
