The Story Behind the Coffee
Colombia Tropical Splash is a celebration of innovation, connection, and the boundless creativity shaping modern Colombian coffee. This lot comes to us through our partners at Forest Coffee, a producer network born from the vision of siblings Martha, Shady, and Elias at El Vergel Estate in Tolima.
Their journey began in 1995 with family farming and took a bold new turn in 2019, when Forest Coffee was founded to bridge the gap between producers and roasters. Today, their work connects over 250 coffee-growing families across Colombia, sharing not only exceptional coffees, but a commitment to transparency, education, and sustainability.
What Makes This Coffee Unique
Tropical Splash begins with hand-selected Pink Bourbon cherries sourced from farms across Tolima, Huila, and Caldas. The cherries are co-fermented with yeast and coconut flavor for 144 hours in sealed anaerobic tanks, creating the foundation for a wildly distinctive flavor experience.
After fermentation, the beans are sun-dried for 30 days with lemon peel, infusing the coffee with a bright, citric twist before resting for 45 days to stabilize and balance the profile. The result is an explosion of flavor that lives up to its name... a cup that tastes like sunshine, where citrus, coconut, and lemonade meet a creamy tropical finish.
