Savor these last few weeks of summer with the newest addition to our coffee line-up, Colombia Sebastian Ramirez Peach Ring. This fruity coffee comes from the same innovative producer behind our popular Colombia Sebastian Ramirez IPA, known for its unique co-fermentation with brewer’s yeast. The Peach Ring variation follows a similar experimental approach but takes it in a sweeter direction. Co-fermented with wine yeast and dehydrated fruit, this coffee offers a distinctively sweet and peachy flavor that’s both vibrant and refreshing. Whether you’re a fan of our IPA coffee or just looking for something new and exciting, this Peach Ring coffee is sure to become a favorite.
First, the cherries are collected and classified, and then they undergo anaerobic fermentation using wine yeast for 120 hours. Next, the depulped cherries are subjected to a 72-hour anaerobic fermentation with CO2 injection, followed by the addition of dehydrated fruit and fruit glucose. Throughout the process, pH levels are continuously monitored, and the coffee is dried slowly and carefully in marquesinas at 40 degrees Celsius.
Sebastian Ramirez is a fourth-generation coffee farmer with over 12 years of experience. He has a presence in multiple countries in Asia and Europe and has joined our mission to make coffee farming exciting. As a Mentor on the Young Producer Program, he brings his expertise to the table. Sebastian began as a traditional grower but eventually delved into fermentations and made connections within the industry. Nowadays, he is a master in carbonic maceration, coffee profiles, and varietals. We are honored to represent him and can confidently say that his coffees are anything but ordinary.
