At Evermore Coffee Roasters, we’re driven by our love for coffees that challenge expectations and redefine what’s possible in a cup. Our newest addition, Colombia Huila Finca Buenavista, does just that. With tasting notes of pineapple, raspberry, and candied orange, this coffee embodies the vibrancy and innovation we’ve come to adore in anaerobic coffees.

A Legacy of Quality
Buenavista Farm, located in the lush Huila region, is a testament to the dedication and passion of its owner, Jesus Barahona. For over a decade, Jesus has managed this family-inherited farm, transforming it into a beacon of high-quality coffee production. Employing around eight skilled workers, the farm is a shining example of meticulous craftsmanship and community-oriented coffee farming.

What sets Buenavista apart is its ability to control every aspect of production on-site. From washing and fermentation to drying, each step is carefully managed to preserve the integrity and uniqueness of the coffee beans. The result? A cup that speaks volumes about the land, the climate, and the hands that cultivated it.

The Anaerobic Process: This particular lot is the product of a natural anaerobic fermentation process. The cherries undergo fermentation in transparent bags for 80-100 hours, creating a controlled environment that intensifies fruity and complex flavor notes. Once fermented, the cherries are dried on patios for 10-15 days, ensuring the final product is both vibrant and balanced.

Anaerobic processing, where coffee cherries ferment in sealed, oxygen-free tanks to develop unique and complex flavors, is a labor of love requiring patience and precision—reflecting our dedication to crafting exceptional coffee experiences. The care taken at Buenavista Farm aligns perfectly with our belief in pushing boundaries to create coffees that are not just beverages but adventures in every sip.
